		<description>Some of the best meals we&#039;ve ever had were grilled foiled fresh-caught fish. I&#039;m an everything but the kitchen sink cook.  I recall a vacation meal one night (just caught grouper) adding a layer of sliced onions, lemons, apples, and oranges, grape tomatos, and kalamata olives with a vinaigrette of fruit juices, olive oil and dijon mustard. Old Bay seasoning to complete. I never measure. Just keep tasting til it&#039;s right. Wrap and grill until done. We thought we had died and gone to heaven! Pick and choose. It&#039;s hard to go wrong.  Enjoy!</description>

I did salmon on a bed of fresh spinach with a bit of onion and mushrooms, and also added in some fresh rosemary along with the fresh thyme. (Gawd, I love our herb garden!)

The possibilities are endless, of course. You could also vary it up by seasoning with splashes of vinegar (red wine, balsamic, whatever suited you) instead of lemon juice. Or use some lime juice instead of lemon. Or perhaps season it up with some mustard -- Dijon or whole grain mustards are the first that pop into my mind for that...or mustard mixed with a bit of reduced-fat salad dressing or mayo as a seasoning.</description>
